Also, I live in the northwest corner of Washington and found a large flush of what appear to be and smell like lactarius rubidus growing under two edible chestnut trees two years ago on about December 1st. I dried them and have used them a couple of times by powdering them to include in cookie recipes. What I have learned is that most recipes use too much candy cap. This causes bitterness. In addition, there is no need to re-hydrate them. Just grind them up in a coffer/spice grinder and add to the dry ingredients. Currently using 5 grams for a large batch of cookies or a 9" x 3" cheesecake.
