I will ask my mushroomer his experience.<br /><br />Last week he brought me about 1 1/2 pounds of chantrel (sp) mushrooms and what a bear those were to clean. They were tasty though! I made a squash, chicken and chantrel stewp seasoned with lemon sage and thickened with sushi rice. Of course, the broth I used was homemade.
